1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken, or any other stuffing mix that is on sale
1 1/2 cups hot water
1/4 cup (1/2 stick) butter or margarine, cut up
4 boneless skinless chicken breast halves cut into cubes (about 1-1/4 lb.)
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/3 cup Sour Cream
1 cup cheddar cheese or Swiss Cheese (It is meant to be made with Swiss cheese, but if I can not find it on sale, then I make it with Cheddar)
Mix contents of Vegetable/Seasoning packet, hot water and butter in large bowl until butter is melted. Stir in Stuffing Crumbs just to moisten. Let stand 5 minutes.
Place chicken in 12x8-inch baking dish or 2-quart casserole. Mix soup, cream and cheese; pour over chicken. Top with stuffing.
Bake at 325 for 1 hour to 1 1/2 hours minutes or until chicken is cooked through.
The recipe says that it serves 4, however I find that by cutting the chicken into cubes, you can actually stretch the recipe. Most people will take an entire chicken breast, but if you cut the chicken in cube, the person will usually take less therefore serving more people. When I make this recipe it is enough for dinner for my family of 4 PLUS left overs for lunches for the next day.
